Ingredients
• 1 cup fruit juice (250 ml)
• ½ cup granulated sugar (100 g)
• 2 tablespoons gelatin powder (20 g)
• ¼ cup cold water (60 ml)
• 1 teaspoon lemon juice (5 ml)
• Food colouring of different colours, optional
• ½ cup granulated sugar (100 g), for coating
Instructions
Pour the cold water into a small bowl and sprinkle the gelatin over it. Leave for about 5–10 minutes to bloom.
Pour the fruit juice and sugar into a saucepan. Heat gently while stirring until the sugar dissolves. Do not boil vigorously.
Remove from the heat and add the bloomed gelatin. Stir until completely melted and smooth.
Add the lemon juice and divide the mixture into separate bowls if making different colours. Add a few drops of food colouring to each bowl.
Pour the coloured mixtures into lightly greased shallow trays or containers.
Leave to cool, then refrigerate until completely firm.
Remove the jelly from the trays and cut into small cubes or use small cookie cutters for different shapes.
Roll each jelly piece generously in granulated sugar.
Leave the coated jellies uncovered for a few hours to dry slightly and develop a lovely chewy texture.
Serve and enjoy your colourful homemade sugar-coated fruit jellies!
